Quick & Easy Vegan Baked Apples


You may have noticed (with a sigh and a tear, of course!) that my blog post frequency has been drastically reduced over the past month or so. It's just been that kind of month, I'm afraid. Not only have I run out of time to share my vegan adventures, but I've run out of time to cook and bake so that I'll have yummy recipes to blog about! The truth is, it may be high time for Roger to start his own foodie politico blog, because he's the one doing most of the cooking!

The sad part, of course, is that I miss it. I miss combing through cookbooks, magazines, and websites, in search of that fun looking recipe. I miss taking photo after photo to document the process in great detail. I miss planning out a week of meals, and then spending two hours going from fruiterie to grocery store to health food store to make sure I get exactly what I need. So when I saw Roger aimlessly poking through my cookbooks and mumbling about "roasting apples" for dessert, I jumped at the chance to recreate a childhood favourite, minus the animal cruelty, of course!

We don't have an apple corer, so I just chopped up the apples instead. After a quick consult with Vegan Momma Chef, I added a bit of Earth Balance, brown sugar, lemon juice, and cinnamon, covered it in tin foil and popped it all in the oven at 350F for about 30 minutes.



I topped each bowl off with some home-made granola from How It All Vegan (a quick, yummy, and healthful time-saver, by the way!), and drizzled the remaining syrupy goodness from the bottom of the corningware over the top. The result? A pretty healthy and VERY delicious version of apple crisp! It hit the spot for Roger, the bear, and for me! I think this will be a staple from now on.
