coconut rice with green beans and tofu...
roasted veggies...
and dal for Easter - all vegan of course!
The follow-up was even better - vegan sugar cookies from The Joy of Vegan Baking...
...and chocolate peanut butter cups from How It All Vegan, one of my favourite recipes of all time, vegan or not! And trust me, food is always better when it's cooked (or baked!) by Vegan Momma Chef.
The best part, though, was being able to make Easter as fun for the bear as I remember it being, without hurting any animals in the process! We bought a whole bunch of little plastic eggs, and a dark chocolate (dairy-free) bunny. She hunted for all of them, with a little help from her dad! Nothing is as fun for our little bear as collecting stuff and putting it in a basket :)
Vegan Momma Chef added a VERY cute duckie basket, filled with a replica of her best bunny friend, some little plastic buddies, and a wind-up chick that brought her tons of joy as it pecked along.
She loved the sugar cookies too!

Vegan

Looks like fun! Anna got that same wind-up chick. It's even in the video I posted over at my blog this morning. Do you feel as weird as I do that chicks are all over the place during Easter even though all male chicks of the egg-laying breed are killed shortly after birth in horrifying ways? Ah, the joy of being vegan around the holidays...
ReplyDeleteYes, I think all of it was not too shabby. And it was fun too!!!!
ReplyDeleteAl: You make such a good point. We've managed to alter so many traditions so as not to contribute to animal cruelty (i.e., making vegan food, using plastic eggs, etc.), but the imagery is pretty constant nonetheless. We're still giving out toy chicks, as you mention, which likely perpetuates the purchase of live chicks through its continuation of the association between Easter and chick.
ReplyDeleteAnne/Mom: I agree! Great fun was had by all :)
