The hardest part about making this dish is finding macadamia nuts that haven't been salted or roasted in oil. The "health food" section at Loblaw's has been a pretty good bet for me! The marinade and nuts make for super-flavourful and healthful tofu cutlets. This recipe calls for some of my favourite ingredients (tahini, coconut, fresh cilantro), so it couldn't really go wrong. It's also a sure-fire winner with the bear AND Roger, so it's a frequent meal in our house!
The bear likes to follow it up with a double spoonful (or two or three) of soygurt. After all, everybody likes a sweet treat after a hearty meal!

Thanks so much for giving it a second go-around - your support is much appreciated! Vegan parenting is such a hot topic of late. The one thing I always try to make clear is that ANY 'diet' can be malnutritious, whether it includes animal products or not. The benefit of a whole-foods, plant-based vegan diet are abundant: fibre, vitamins, protein, healthy fats, minerals, phytochemicals... the list goes on and on. What delicious little bundle of joy WOULDN'T thrive with all that good stuff??
